If you are looking for something fun for this years 4th of July party, then look no further! I was thinking about what to make for this weekend and instantly thought of strawberry shortcake. I wanted to include blueberries too, to make it a little more festive. While creating this recipe, I realized that angel food cake wasn’t right for the kebabs, so I made a classic vanilla donut. Instead of doing a glaze or frosting, I served Cool Whip on the side and people dunked the donuts in it! Hope you enjoy!
Recipe makes approximately 20-24 mini donuts depending on how much you fill the pan.
Ingredients Needed:
- 1 package of strawberries
- 1 package of blueberries
- 1 cup of flour
- 6 tbsp of sugar
- 1 tsp of baking powder
- 1/4 tsp of cinnamon
- 6 tbsp of buttermilk
- 1 egg
- 1/2 tsp vanilla
- 1 tbsp melted butter
Directions:
Donut
- Preheat oven to 325 degrees and grease donut pan or mini donut pan
- In a large bowl, mix together:
- 1 cup of flour
- 6 tbsp of sugar
- 1 tsp of baking powder
- 1/4 tsp of cinnamon
- To that mixture, add:
- 6 tbsp of buttermilk
- 1 egg
- 1/2 tsp vanilla
- 1 tbsp melted butter
- Fill the donut pan (see here for tip on how to do this)
- Bake for 8-11 minutes (maybe a bit less for the tiny donut pan)
- Let cool before putting on the stick
Kebab
- Prepare the strawberries and blueberries (clean and slice to preferred size).
- Coat the strawberries and blueberries in a little bit of sugar and put in the fridge while the donuts are baking.
- When donuts are done, put the strawberries, blueberries, and donuts on the stick in whatever order you’d like!
- Fill a small container with Cool Whip for dunking!
