Lemon Poppy Seed Donut/Doughnut Recipe

These lemon poppy seed donuts might be some of my favorites.  In addition to being a lover of donuts, I also love all things lemon.  These lemon donuts are a fluffy delight with just the right amount of sweet and sour.

Ingredients Needed

  • 2+3/4 cups of flour
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 2 tbsp poppy seeds
  • 1/4 cup of melted butter
  • 1/4 cup of canola oil
  • 3/4 cup + 2 tbsp of sugar
  • 1 tbsp of lemon zest
  • 2 large eggs
  • 3/4 cup + 2 tbsp buttermilk
  • 1 tbsp of lemon juice (can be fresh or not, but you can always use juice from the lemon you got the zest from!)
  • 1/2 cup of powdered sugar
  • 1 tbsp milk

Directions

Donuts

  1. Preheat oven to 375 degrees and grease donut pan
  2. In a bowl, mix together the following dry ingredients:
    • 2+3/4 cups of flour
    • 1 tsp of baking powder
    • 1/2 tsp of baking soda
    • 1/2 tsp of salt
    • 2 tbsp poppy seeds
  3. In a separate bowl, using a hand mixer or stand mixer, mix together:
    • 1/4 cup of melted butter
    • 1/4 cup of canola oil
    • 3/4 cup + 2 tbsp of sugar
    • 1 tbsp of lemon zest
  4. To that mixture, mix in 2 large eggs, one at a time
  5. Then, to that mixture, add 3/4 cup + 2 tbsp of buttermilk
  6. Bake for 7-8 minutes
  7. Move to cooling rack when done

Glaze

  1. Combine 1 tbsp of lemon juice, 1 tbsp of milk, and 1/2 cup of powdered sugar.  Add more or less powdered sugar depending on how thin or thick you want your glaze.
