Cookie Dough Donut/Doughnut Recipe

During this weekend’s baking adventures, I decided to try my hand at making edible cookie dough frosting to put on my basic chocolate cake donut.  My husband (this weekend’s kitchen helper) and I tried a few different recipes before finally deciding this batch won.  Hope you enjoy!

Recipe should make approximately 8-10 donuts, depending on how much you fill your donut pan.

Ingredients Needed:

  • 1 cup of flour (I prefer whole wheat)
  • 1/4 cup of cocoa powder
  • 1/2 tsp of baking soda
  • 1/8 tsp of salt
  • 1/2 cup of buttermilk
  • 1/2 cup of sugar
  • 1 large egg
  • 2 tbsp of butter
  • 1 tsp of vanilla

 

  • 3/4 cup of brown sugar
  • 1 cup of powdered sugar
  • 1 cup of softened butter
  • 1 cup of flour (I used a bit less)
  • 2 tsp of vanilla
  • 4 tbsp of milk

Directions:

Donut

  1. Preheat the oven to 350 degrees and grease donut pan
  2. In a large bowl, mix together:
    • 1 cup of flour (I prefer whole wheat)
    • 1/4 cup of cocoa powder
    • 1/2 tsp of baking soda
    • 1/8 tsp of salt
  3. In a separate bowl, mix together:
    • 1/2 cup of buttermilk
    • 1/2 cup of sugar
    • 1 large egg
    • 2 tbsp of butter
    • 1 tsp of vanilla
  4. Add wet ingredients to dry ingredients and mix until just combined.  Don’t overmix!
  5. Fill donut pan (see here for tip on best way to do this!)
  6. Bake for 8-10 minutes or until donuts bounce back when touched
  7. Let donuts cool completely before putting the frosting on

Cookie Dough Frosting

  1. Using a hand mixer on low, mix:
    • 3/4 cup of brown sugar
    • 1 cup of powdered sugar
    • 1 cup of softened butter (can be a little melted, but should not be all the way melted or it will be flat)
  2. To the above mixture, add:
    • 1 cup of flour (I used a bit less)
    • 2 tsp of vanilla
  3. Slowly add in tbsps of milk, until you’ve added about 4 tbsps
  4. Add in chocolate chips (OR if you want to use a piping bag to frost, DON’T add the chocolate chips, because they will get stuck.  Instead, frost donuts with the frosting and put chocolate chips on top.  I put chocolate chips in the frosting AND on top!)
  5. Frost the donuts and sprinkle chocolate chips on top.
