Raspberry Coffee Cake Donut/Doughnut Recipe

This morning, my husband decided to help me in the kitchen.  I let him choose our donut recipe and he said he wanted something with raspberry in it and said “can we make your coffee cake donuts with raspberry on them?”  Seeing my husband this excited about donuts was thrilling for me, so of course I said yes! Hope you enjoy this recipe as much as we did!

If you aren’t into raspberry, feel free to use the coffee cake recipe sans raspberry drizzle.  Its still delicious with regular glaze!!

Recipe makes about 10-11 donuts, depending on how much you fill the donut pan!

Ingredients Needed:

  • 2/3 cup of sugar
  • 2/3 cup of flour
  • 2 tsp of cinnamon
  • 4 tbsp of butter 
  • 2 cups of fresh or frozen raspberries
  • 1/4 cup of sugar
  • 1 tsp of corn starch
  • 2/3 cup of powdered sugar

 

Directions:

Donut/Topping

  1. Preheat oven to 425 degrees and grease donut pan
  2. Make the topping by combining (in a small bowl):
    • 2/3 cup of sugar
    • 2/3 cup of flour
    • 2 tsp of cinnamon
  3. Pour 4 tbsp of butter over the above mixture and mix until combined and grainy
  4. Set the toppings to the side
  5. In a large bowl, mix together:
    • 2 cups of flour
    • 2/3 cup of sugar
    • 2 tsp of baking powder
    • 1 tsp cinnamon
    • 1 tsp salt
  6. In a small bowl, mix together:
    • 3/4 cup of buttermilk
    • 2 eggs
    • 2 tbsp of oil
  7. Mix wet ingredients into dry ingredients until just combined
  8. Fill donut pan (see here for tip on how to do this!)
  9. Once the donut pan is filled, put the topping on each donut (you don’t need to press it into the donut, the donut will bake around it!)
  10. Bake for 7-9 minutes
  11. Let cool for 3-5 minutes before removing from pan

Raspberry Glaze

  1. Put 2 cups of raspberries (fresh or frozen) in a medium sauce pan and mash them on low heat
  2. Add 1/4 cup of sugar and 1 tsp of corn starch and bring to a boil
  3. Once boiled, remove from heat and transfer mixture to a cool bowl
  4. Add 2/3 cup of powdered sugar to sweeten and thicken the mixture
  5. Drizzle on top of donuts as desired

Note: In most of the pictures, you can see that I also used a class glaze.  For this, just combine 2/3 cup of powdered sugar, 1 tbsp of milk and stir until combined.
