Blueberry Pie Donut/Doughnut Recipe

Looking for something to make for a cookout this weekend?  Don’t want to make the same thing that everyone else will be making? Try these, I promise you wont regret it!

My favorite thing about these donuts is that you can have so many options when making them.  You can put the pie topping on top, or you can put it in between.  You can use a William Sonoma donut kit or make the donut from scratch.  You can put cinnamon sugar on the outside or keep them plain and simple.  So, feel free to customize these as you wish or follow my directions exactly.  No matter what, you are going to like what you eat!

If you decide to go the route of the WS donut kit, just ignore the directions for the donut, and follow the steps for the blueberry pie filling!

Recipe should make approx. 8 donuts depending on how much you fill the pan. 

Ingredients Needed:

  • 1 cup flour (I prefer whole wheat!)
  • 1/2 cup+ 1/3 cup of sugar
  • 1 tsp of baking powder
  • 1/4 tsp of baking soda
  • 2+1/2 tsp of cinnamon
  • 1/4 tsp of nutmeg
  • 1/8 tsp of salt
  • 1 large egg
  • 1/3 cup plain Greek yogurt
  • 3 tbsp of milk
  • 2 tbsp of vegetable oil
  • 2 tsp of vanilla extract
  • 3+1/2 cup of fresh blueberries
  • 1/2 cup of sugar
  • 2 tbsp of water
  • 1 tsp of cornstarch
  • 1 tbsp of lemon juice
  • 1/2 cup of powdered sugar
  • 1 tbsp milk
  • 1 tsp blueberry pie filling for color

Directions:

Donut & Cinnamon Sugar Topping

  1. Preheat oven to 350 degrees and grease donut pan
  2. In a large bowl, mix together:
    • 1 cup flour (I prefer whole wheat!)
    • 1/2 cup of sugar
    • 1 tsp of baking powder
    • 1/4 tsp of baking soda
    • 1 tsp of cinnamon
    • 1/4 tsp of nutmeg
    • 1/8 tsp of salt
  3. In a medium bowl, mix together:
    • 1 large egg
    • 1/3 cup plain Greek yogurt
    • 3 tbsp of milk
    • 2 tbsp of vegetable oil
    • 2 tsp of vanilla extract
  4. Add the wet ingredients to the dry ingredients and mix until incorporated.  Make sure not to over mix!
  5. Fill the donut pan (see here for tip on the best way to do this!)
  6. Bake for 12-14 minutes or until they bounce back when touched
  7. In a small bowl, while donuts are baking mix together:
    • 1/3 cup of sugar
    • 1+1/2 tsp cinnamon
  8. As soon as, donuts are on cooling rack, coat with butter and toss in the cinnamon sugar mixture (see here for an easy way to coat with butter and to use less of it!)

Blueberry Pie Filling

  1. In a saucepan, combine:
    • 3+1/2 cup of fresh blueberries
    • 1/2 cup of sugar
    • 2 tbsp of water
    • 1 tsp of cornstarch
    • 1 tbsp of lemon juice
  2. Cook over medium heat for about 10 minutes until the blueberries pop and begin to thicken.
  3. Remove from heat and let cool before filling donuts.
  4. Cut donuts in half and fill donuts with a spoon.

Glaze

  1. In a small bowl, mix together:
    • 1/2 cup of powdered sugar
    • 1 tbsp milk
    • 1 tsp blueberry pie filling for color
  2. Drizzle on to the donuts.

Note: I would recommend only filling the donuts you plan on eating.  If you are saving them for later, keep the filling separate and fill them when you eat them! It definitely keeps the texture of the donut much better!
