Coconut Key Lime Donut/Doughnut Recipe

Today’s 90 degree heat had me really day dreaming about summer (I’m a teacher, and we still have 3 weeks left).  For some reason, all I could think of was key lime pie.  Needless to say I came straight home and made some coconut key lime pie donuts.  Not only did these totally hit the spot, they were not hard to make at all!

Recipe makes approx. 10 donuts, depending on how much or how little you fill the donut pan. 

Ingredients Needed:

  • 1 cup of flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 cup of brown sugar
  • 1/3 cup buttermilk (see tips and tricks for what to do if you don’t have any)
  • 1/4 cup vegetable oil
  • 1 tsp lime zest
  • 1 tbsp + 2 tsp key lime juice
  • 1 cup of powdered sugar
  • 1 tbsp milk
  • green and yellow food coloring

Directions:

Donuts

  1. Preheat oven to 375 degrees and grease pan
  2. In a large bowl, mix together:
    • 1 cup of flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
  3. In a small bowl, mix together:
    • 1 large egg
    • 1/2 cup of brown sugar
    • 1/3 cup buttermilk (see tips and tricks for what to do if you don’t have any)
    • 1/4 cup vegetable oil
    • 1 tsp lime zest
    • 2 tsp key lime juice
  4. Add wet ingredients to dry ingredients and mix until incorporated, don’t over mix!
  5. Fill donut pan (see tips and tricks on how to do this!)
  6. Bake for 9 minutes
  7. Let cool before frosting

Glaze/Topping

  1. Mix together:
    • 1 cup powdered sugar
    • 1 tbsp key lime juice
    • 1 tbsp milk
    • 1 drop green food coloring, 1 drop yellow food coloring
  2. Top with graham crackers and coconut!
