Chocolate Espresso Donut/Doughnut Recipe

Need to cure your case of the Mondays?  This recipe combines 3 of the most Monday curing foods: coffee, chocolate, and donuts.  Last night, as I was meal-prepping for the week, I decided to whip up this donut recipe in an attempt to not only cure my Sunday scaries, but to preemptively cure my Monday blues.  And let me tell you, it worked.  On my way out the door this morning, I grabbed one of these decadent treats, pretended it was okay to eat this much chocolate in the morning, and smiled my whole way to work (never happens).

Recipe makes about 8-10 donuts depending on how much or how little you fill the pan. 

Ingredients Needed:

  • 1+1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup brown sugar
  • 1 large egg
  • 1/3 cup + 1 tbsp milk
  • 1/3 cup veggie oil
  • 1 tsp vanilla
  • 1/3 cup yogurt (plain)
  • 1 cup sugar
  • 1/2 cup + 3 tbsp cocoa powder
  • 1/2 cup of powdered sugar (confectioners sugar)
  • 1/4 cup melted chocolate
  • 4+ 1/2 tsp espresso powder/coffee powder

Directions

Donuts

  1. Preheat oven to 350 degrees and grease donut pan
  2. In a large bowl, mix together:
    • 1+1/2 cups flour
    • 1/2 cup cocoa powder
    • 1/3 cup brown sugar
    • 2 tsp espresso powder/coffee powder
    • 1/2 tsp baking soda
    • 1/2 tsp baking powder
    • 1/2 tsp salt
  3. In a small bowl, mix together:
    • 1 large egg
    • 1/3 cup milk
    • 1/3 cup veggie oil
    • 1 tsp vanilla
    • 1/3 cup yogurt (plain)
  4. Add wet ingredients to dry ingredients and mix until incorporated (note: this mixture is a little bit thicker and makes the donuts a little lumpier, that’s okay!)
  5. Pour batter into piping bag or ziploc bag (see here for easy tip!) and pipe into the donut pan (note: you may want to cut a thicker hole in the end of the ziploc for these, because the batter is a bit thicker and it will make it easier to fill!)
  6. Bake for 12 minutes
  7. Move to cooling rack, but don’t let them cool for long before putting the sugary topping!

Topping

  1. Mix together:
    • 1 cup sugar
    • 2 tsp espresso powder/coffee powder
    • 3 tbsp cocoa powder
  2. Coat warm donuts with the mixture above (to get it to stick, I often melt a little butter and brush it on.  I will be posting soon in tips and tricks to show another easy way to get this stuff to stick with less mess!)

Glaze

  1. Mix together:
    • 1/2 cup of powdered sugar (confectioners sugar)
    • 1 tbsp milk (add more for the consistency you want)
    • 1/4 cup melted chocolate (I used milk chocolate, but dark would have also been delicious)
    • 1/2 tsp espresso powder/coffee powder
  2. Fill into a small ziploc baggie and cut a hole at the end
  3. Drizzle over donuts
  4. Finish off with fun sprinkles or chocolate flakes!
