Double Chocolate Donut Kebabs Recipe

 

Last night, I was having my college roommates over for a reunion, as one of them lives really far away.  Every time they come over, I try to make a fun treat.  The first time, they came over for brunch, which made donuts a shoe in.  I made them cinnamon roll donuts and they loved them!

Last night, they were coming for dinner, but, as the Donut Lady does, I still made donuts 🙂 I decided to try something that I have been dying to practice, which is making donut holes.  For a summer cookout style dinner, I decided there was no better way to do that than donut kebabs (aka donuts on a stick). These were a crowd favorite! How do I know this?? I was in the process of making dinner when my best friends walked in.  Instead of asking what we were having for dinner, they both walked right to the donut kebabs and started eating them.  One even asked if we could just have donuts for dinner (even with the tacos cooking on the stove, you know I wanted to say yes).

So, without further adieu, find the recipe for these fun summer treats below!

Ingredients Needed:

  • 1 cup of flour (I prefer whole wheat)
  • 1/4 cup + 3 tbsp of unsweetened cocoa powder
  • 1/2 tsp of baking soda
  • 1/4 tsp of salt
  • 1/2 of light brown sugar
  • 1/2 cup of buttermilk (look here if you don’t have any!)
  • 1 large egg
  • 4 tbsp of unsalted butter, melted
  • 1 tsp of vanilla
  • 1 to 1+1/2 cups of powdered sugar
  • 3-4 tbsp of milk
  • Any toppings you’d like- I used rainbow sprinkles, but you could use coconut, nuts, sprinkles, sugar)

Directions:

Donuts

  1. Preheat oven to 325 degrees.
  2. In a medium bowl, whisk together:
    • 1 cup of flour
    • 1/4 cup of unsweetened cocoa powder
    • 1/2 tsp of baking soda
    • 1/4 tsp of salt
    • 1/2 of light brown sugar
  3. Set the above dry ingredients aside, and in another bowl, whisk or use stand mixer to mix together:
    • 1/2 cup of buttermilk
    • 1 large egg
    • 4 tbsp of unsalted butter, melted
    • 1 tsp of vanilla
  4. Use a stand mixer or by hand mix together the wet and dry ingredients until incorporated (as always, do not over mix)
  5. Fill the donut pan (in this case, I used a donut hole pan, but this recipe works for a regular donut pan too!)  See here for tips on filling the pan.
  6. For donut holes bake for 8 minutes and check to see if they bounce back when touched.  If so, they are done.  For regular donuts, bake 10 minutes and then check!
  7. Remove from oven and let cool before frosting.

Chocolate Glaze

  1. In a shallow bowl (easier for dunking if that’s your style!) mix together:
    • 1 to 1+1/2 cups of powdered sugar
    • 3-4 tbsp of milk
    • 3 tbsp of unsweetened cocoa powder
  2. Either dunk the donut holes/donuts in the glaze, or drizzle over using a spoon.  For drizzling, sometimes its easier to do when the glaze is heated for a few seconds in the microwave!)
  3. Add whatever toppings you’d like while the glaze is still gooey!

Once they are all cooled, glazed and sprinkled use a skewer and stick 3-5 donuts on each for the kebab.  I went to Stop and Shop and found these sticks with the s’mores ingredients!
