Fried Pumpkin Cheesecake Donuts

Even being the donut-obsessed bride that I was, I barely was able to eat a donut at my own wedding.  It is so easy to get caught up in the moment (as a bride should!) and to forget to eat, but it was very unlike me to not eat 1 (or 5) donuts at my own wedding.

So, when my husband and I arrived in Deer Valley, Utah for our honeymoon, I decided I just had to make some donuts.  Lucky for us, we were staying at at my aunt and uncle’s condo, and they had all of the supplies we needed to try frying donuts for the first time.  It was right around thanksgiving, so I thought that pumpkin cheesecake was the most fitting flavor combination.

Needless to say, we ate pumpkin cheesecake donuts instead of any sort of Thanksgiving dinner (I’m not mad about it!)

Ingredients Needed

  • 3+1/2 cups flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp grund ginger
  • 1/2 tsp baking soda
  • 1 cup sugar
  • 3 tbsp butter
  • 1 egg
  • 2 egg yolks
  • 1/2 cup buttermilk
  • 1 cup canned pumpkin puree
  • 1 cup confectioners sugar
  • 1/4 cup cream cheese
  • 2 tbsp milk
  • vanilla



  1. In a medium bowl, whisk together:
    • 3+1/2 cups of flour (I prefer whole wheat)
    • 4 tsp of baking powder
    • 1 tsp of salt
    • 1 tsp of ground cinnamon
    • 1/2 tsp of ground ginger
    • 1/2 tsp of baking soda
  2. In another bowl, mix together with electric hand mixer or stand mixer:
    • 1 cup of sugar
    • 3 tbsp of butter
  3. To the wet mixture, add:
    • 1 egg
    • 2 egg yolks
    • 1 tsp of vanilla
  4. Gradually beat 1/2 cup of buttermilk to the wet mixture
  5. In 4 turns, beat 1 cup of pumpkin into the wet mixture
  6. Fold dry ingredients into the wet ingredients with a spatula
  7. Chill for 3 hours
  8. Preheat oil to 365-370 degrees.  Make sure it does not go over that temperature!)
  9. Roll out dough to 1/2 inch thickness
  10. Cut 2+1/2 inch rounds with a cookie cutter (or a mason jar top, if you don’t have cookie cutters) and cut out the middle 1 inch (or use a bottle cap!)
  11. Fry donuts until golden brown and then flip.
  12. Take donuts out of the oil and place on a baking sheet lined with paper towels.


Cream Cheese Frosting

  1. Mix together (it might be easiest to do this with a hand mixer, to get a smooth texture)
    • 1 cup of confectioners sugar
    • 1/4 cup of cream cheese
    • 1 tsp vanilla
    • 2 tbsp of milk
  2. Once donuts are cooled, dip the top of the donuts into the frosting
